When cooking at home, it's important to have creative and delicious ways to use up leftovers.

This eliminates the feeling of “eating as usual,” where processed foods and toxic packaged foods can slowly creep back into the menu.

Delicious leftovers take a huge load off of cooks like us who have to teach ourselves how to cook at home and prepare freshly prepared meals 3 times a day, 7 days a week!

One of my favorite recipes for using up breakfast leftovers is frying up crispy oatmeal pancakes overnight.

All you need is one or more cups of cold, soaked, and fully cooked rolled oats prepared the day before.

You may not have noticed it yet, but reheated oatmeal is really boring and lacks the texture of freshly cooked oatmeal.

Therefore, making pancakes with leftover oatmeal soaked in water is a much more delicious and enjoyable way.

Note: I think this recipe tastes better with soaked rolled oats rather than soaked steel-cut oats.

Overnight Oatmeal Pancakes

This Easy Oatmeal Pancakes Recipe is a delicious and easy way to reheat leftover soaked and cooked rolled oats.

  1. Crack the eggs into a medium bowl, add the remaining oatmeal and mix until well combined.

  2. Heat the butter in a heavy skillet until melted.

  3. Make small pancakes about the size of your palm and place them in the center of a skillet with melted butter.

  4. Cook over medium heat for 2-3 minutes.

  5. Use a spatula to flip the pancakes (this is my favorite) so they absorb the remaining butter.

  6. Cook for another 2-3 minutes on high heat. Turn off the heat, cover the skillet, set the timer for 15 minutes, and place the skillet on the hot burner (but turn off the heat).

  7. When the timer goes off, use a spatula to transfer the pancakes to the plate (one side will be slightly browned and crispy). Top with blueberries and maple syrup and enjoy!
