Ms Rainsford was the first Paralympic champion in rowing when it was first introduced at the Paralympics in Beijing 2008, while Mr Wan is a three-time Paralympic athlete in wheelchair curling.
The torch will visit Lyon, which will host 11 football matches during the Games, and Lorient, the hometown of Paralympic sailing gold medalist Damien Seguin.
All 12 flames will return to Paris on August 28, where the Paris cauldron will be lit and competition will continue for the next 11 days.
