Pistachio Butter – The recipe calls for half a cup of pistachio butter or pistachio cream. I like to save money by making my own one-ingredient pistachio butter at home, but a store-bought jar also works.
Milk of choice – Almost any milk will do, but some give creamier results than others. As a vegetarian, I love oat milk, coconut milk, and low-calorie almond milk.
Want more protein? Replace up to half of the milk with your favorite high-protein yogurt.
Sweetener – This can be radioactive white sugar, unrefined sugar, pure maple syrup, or honey. For sugar-free pistachio popsicles, try allulose, monk fruit, or xylitol.
Vanilla Extract – We use pure vanilla extract, not imitation vanilla flavoring. I also often like to mix in about half a teaspoon of cardamom powder.
salt – A fourth teaspoon of salt adds depth of flavor to the recipe and balances the sweetness. It is recommended not to add salt. Adding salt makes it taste much better. However, if you want to scale it down and see what you think, it won’t affect the texture.

- In a large measuring cup or small blender, combine milk, pistachio butter, sweetener, salt, and pure vanilla extract.
- You can stir in the optional crushed pistachios now, or leave them to freeze and sprinkle on top.
- Using a blender, hand blender, or fork, whisk all ingredients until evenly combined. For the best taste and texture, it is important to ensure that the pistachio butter is fully incorporated.
- Divide the mixture into ice pop molds or cups. Add the sticks and freeze until solid.
- Remove from the popsicle mold and dip into melted chocolate (optional). Garnish with crushed pistachios, sprinkles and cacao nibs, if desired.
- Store leftovers, covered, in the freezer for up to 3 months.
