This is a really simple summer side dish. The oregano flavor is really strong and doesn't need any garnishing. But a little more dried oregano wouldn't hurt either! From what I've researched, the eggplant texture is better when grilled without the lid open, and the outside is crispy. So I grilled the first half on an open grill, but without the lid open, the cheese took too long to melt, so I split it in two. Serve with Grilled Tilapia Oreganata or these Air Fryer Chicken Cutlets.
