Sausage and peppers is a dinner that never gets old. It’s been a family favorite for years because it’s quick, everyone loves it, and it couldn’t be easier to make. I use Italian chicken sausage, which has all the flavor of traditional pork sausage but with less fat, and I’ve found a few brands that my family prefers. During the colder months, we cook indoors, but once grilling season begins, everything, including peppers and onions, goes on the grill. A must-eat dish at backyard gatherings, it is served with plenty of crusty bread. Try more variations.   • olive oil to stir-fry vegetables
  • vegetable: Red and yellow bell peppers and onions
  • Kosher salt and pepper For seasoning
  • Italian Chicken Sausage: What I like most is award and outdoor fresco. Whole Foods also has great options. Use sweet or hot Italian sausage, depending on your spice preference.
  • Italian bread: I like to serve sausage and peppers with crusty Italian or French bread.

How to make sausage and peppers

In the summer, I cook everything on the grill, but I’ve also included stovetop instructions for vegetables in case you don’t have a cast iron skillet. If you want to grill the peppers and onions, place them in a cast iron skillet over low heat on the grill. Close the grill lid and cook until the vegetables are soft. See recipe card below for printable instructions.

  1. Cooking Vegetables: Heat peppers and onions in a large skillet over medium heat. Season with salt and pepper, cover the pan and cook until tender.
  2. Grill sausages Boil over medium heat for about 10-15 minutes. Keep turning it over to prevent it from burning.
  3. How to Serve: Once the sausage is fully cooked, cut it in half and serve it on a plate with peppers, onions, and bread.

Here are three more ways to cook sausages when you don’t have an outdoor grill.

  • pot: Grill sausages over medium heat, turning occasionally, until cooked through, 10 to 15 minutes.
  • oven: Roast on a rack 6 inches from the top, turning every 4 to 5 minutes, until browned.
  • Air fryer: Place in air fryer at 400°F for 10 to 23 minutes, turning halfway through.

How do you know if the sausage is fully cooked?

If you’re not sure if your sausage is fully cooked, check the link with an instant-read thermometer. The internal temperature should be 165°F. If using fully cooked sausage, heat until warm in the center. Cooking time may need to be reduced.

  • sausage: Substitute with Italian turkey or pork sausage. Make it plant-based by using vegan sausage.
  • pimento: Use peppers of any color you like. I like to use two colors, but you could also use all red or add orange or green peppers.
  • bread: Swap out your Italian bread for sourdough, baguette, ciabatta, or focaccia.

Serving Size: 1 cup sausage and peppers, 2 ounces bread

  • Preheat the grill or broiler.

  • Heat a large skillet over medium heat and once hot, add the olive oil, peppers and onions and toss well. Season with salt and pepper to taste. Cover the pan and cook over medium heat, stirring occasionally, until the vegetables are tender.

  • Note: To make it entirely on the grill, use a cast iron skillet and cook the onions and peppers over low heat with the grill covered until they are tender, then stir frequently, then set aside and grill the sausages.
