Smoked salmon and cream cheese filling: Start by mixing the red onion, cream cheese, capers, dill, and lox in a medium bowl. You can make it a day ahead and store it in the refrigerator.

Prepare cucumbers: Peel the cucumber, reserving the skin, and cut into half-inch pieces. Using a melon baller, scoop out the center of the cucumber, making sure not to cut through the bottom.

Cucumber Bites Assembly: Spoon salmon mixture into each cucumber cup and garnish with dill.

strain
- salmon: You can use any smoked salmon you like. Gravlax may also work.
- cream cheese: If you don’t have whipped cream, use Neufchatel, a cream cheese with 1/3 less fat.
- onion: Substitute with shallots.
- cucumber: Plain cucumbers also work.
- Hub: Replace the dill with chives.
Smoked Salmon vs. Smoked Salmon Nova Rocks
Nova lox is cured and lightly smoked, resulting in a smooth, creamy, buttery flavor with a hint of smoke. Smoked salmon is preserved by salting and smoking, giving it a slightly salty and smoky flavor. I prefer Nova Lox, which is commonly served with bagels in New York.
