oh my god… These fantastic filled buns are a new favorite! It’s so delicious that your mouth is watering! And yes, I’m pretty sure mouthwatering isn’t a real word. But I made an exception for this recipe.
Every few months, I like to browse the gourmet cheese section of the grocery store. I love experimenting with different cheeses and exposing myself and my family to the wide world of cheese. Typically I pick up a small slice of the various cheese wedges that are priced because they are on sale or because it’s about time. I also love asking questions and getting recommendations from the cheese experts there.
A few weeks ago, I had a conversation with the young man behind the cheese counter. (You can see a video of her explaining it on her Instagram page!) Her name is Abby and I guess you could call her the “Cheese Whisperer.” Seriously, the more I learned about her and what she does with cheese, the more I liked her and wanted to know all her cheese secrets!
She shared how she loves filling her sourdough bread with all kinds of combinations of savory and sweet. Well, my heart raced and I immediately thought of the Honey Pear & Rosemary Preserves I just made. Before I knew it, I was just as excited as she was and asked if I could make a video to share her wisdom with you all!
This pistachio pear and brie stuffed sourdough was my first attempt. I thought it was pretty tasty, but I also know that sometimes chefs can be a bit biased. So I called my neighbor, a certified foodie with a refined palate and always willing to try my tastes. Plus, we had a lot of family members… so it was easy to get opinions!
I wanted to record her reaction the moment she took her first bite! Within a few minutes the entire loaf was almost gone and there were only four of us there at the time. Needless to say, this recipe was immediately declared a winner and entered our “Family Favorite” Recipe Hall of Fame.

Pistachio Pear & Brie Filled Sourdough
this Pistachio Pear & Brie Filled Sourdough Who can resist warm, melty brie, sweet pear preserves, and crunchy pistachios all baked into a crusty loaf of sourdough?
Serving Size: 6
- 1 8 inches round loaf sourdough bread
- 1/2 pound Double Cream Brie Cheese, with Rind
- 6-8 oz. Homemade Pear Preserves Get the recipe here
- 1/4-1/2 cup roasted pistachios chopped
- sturdy aluminum foil

Preheat oven to 400 degrees.

Prepare the bread: Cut the top of the bread into circles. Remove the top and hollow out the inside, leaving a 1-inch crust. Reserve the bread slices for dipping.

Add the cheese: Cut the brie into 1-inch pieces. Place in the bread bowl and press to fill all the edges. (If you really like cheese, you can double this!)

Add toppings: Spread the pear preserves evenly over the cheese and sprinkle with chopped pistachios. Cut the top of the bread into about 1 inch pieces and place it back on the bread.

Wrap in foil: Wrap the entire loaf tightly in heavy-duty foil, sealing the seams tightly.

Bake: Place on a baking sheet and bake for 25-30 minutes or until the cheese is melted and sticky.

Serve warm: Remove foil, place on serving board, and dip remaining bread slices into melted cheese and preserves.
