Main ingredients
strawberry – The recipe calls for at least one cup of fresh or frozen strawberries. If using frozen products, be sure to completely thaw the strawberries and drain off any excess liquid before dicing.
Dough – Using pizza dough (packaged or homemade) is one of my favorite breakfast sweet roll shortcuts. Because there is no need to proof the yeast or knead the dough and wait for it to rise several times. All the hard work has been done for you in advance.
You can find refrigerated pizza dough in the prepared foods section of many grocery stores, or substitute basic bread dough or sourdough instead. Or, use the dough from your favorite cinnamon roll recipe or vegan cinnamon rolls.
For gluten-free strawberry rolls, buy gluten-free pizza dough or make your own from scratch.
sugar – Any granulated white or brown sugar will work. I love unrefined cane sugar, which adds a subtle caramel flavor. To prepare sugar-free sweet rolls, choose a sugar-free, all-purpose sweetener like xylitol or granulated monk fruit.
Corn Starch – It’s important to stir 1 tablespoon of cornstarch or 2 tablespoons of flour into the berries. This is because it helps thicken the filling so it doesn’t run out when baking.
Coconut Oil – 3 tablespoons of coconut oil or butter adds richness and buttery flavor. For heart-healthy, oil-free rolls, use smooth almond butter or cashew butter instead.
Cinnamon (optional) – We recommend adding 4 teaspoons of ground cinnamon to the filling for added depth of flavor.


Cream Cheese Frosting Ingredients
You can honestly glaze these rolls with anything you like: traditional buttercream, store-bought vanilla frosting, or a simple glaze.
I’ve included my personal favorite classic cream cheese icing recipe below. If you choose this frosting option, here’s everything you need to make it.
Cream Cheese – The recipe calls for 4 ounces of full-fat cream cheese or vegan cream cheese. I’ve never tried substituting low-fat cream cheese or Greek yogurt, but feel free to experiment.
Powdered sweetener – The frosting uses standard confectioners’ sugar, also called powdered sugar or icing sugar. Alternatively, use powdered sweetener with the same amount of powdered sugar without the sugar.
You can also make your own powdered sugar by blending white sugar, coconut sugar, or unrefined date sugar in a blender or food processor until fine and powdery.
Milk of choice – To thin the glaze to your desired consistency, add a tablespoon of milk or dairy-free milk. For a fun flavor, use less than half the milk in your brewed coffee, chai tea, or espresso.
Vanilla – I like to mix in a half teaspoon of pure vanilla extract to complement the natural sweetness of the strawberries.




How to Make Strawberry Sweet Rolls at Home
- Gather all the ingredients ahead of time and read the recipe instructions.
- Take the pizza dough out of the refrigerator and let it come to room temperature.
- Preheat oven to 350°F or 176°C.
- Meanwhile, using a rolling pin, roll out the pizza dough on a floured surface. I recommend rolling it out as thin as possible, into a rectangle less than one-eighth of an inch thick. The thinly rolled dough provides a stickier strawberry filling with each bite.
- Spread the softened butter or oil evenly over the entire surface of the rectangular dough.
- Combine chopped strawberries, sugar, cornstarch, and cinnamon (optional) in a medium mixing bowl and stir until well combined.
- Now spread the filling evenly over the dough, almost all the way to the sides.
- Roll out the dough tightly into a long log shape. Then use a sharp knife or pizza cutter to cut thin slices. It is okay if a little bit of berry liquid flows out during this process.
- Arrange the unbaked strawberry pastry in an 8-inch baking pan and place the pan on the center rack of the preheated oven.
- Add the bubbly strawberry filling and bake for 35 minutes, until soft and pale golden.
Cream Cheese Frosted Strawberry Roll
To make easy cream cheese frosting, first melt the cream cheese to room temperature.
Using a hand beater or stand mixer, whip the cream cheese and vanilla extract, and slowly fold in the powdered sugar, about half a cup at a time.
If the frosting is too thick, add a tablespoon or more of milk as needed.
For the stickiest and best results, ice the rolls while they are still warm. This will allow the frosting to melt nicely onto the hot strawberry sweet rolls.
Store leftover glazed rolls in a covered container in the refrigerator for up to 5 days, then reheat before eating.


Katie’s Favorite Recipe Variations
Strawberry Lemon Roll: Mix lemon zest into cream cheese frosting following the basic recipe below. Make a quick lemon glaze by replacing milk with lemon juice. This variation also goes well with lime, orange, or orange peel.
Chocolate Chip Strawberry Roll: After adding the strawberry filling, sprinkle a handful of mini chocolate chips or white chocolate chips on the rolled dough.
Strawberry Cinnamon Roll: Increase the amount of cinnamon in the recipe to 1 tablespoon.
Raspberry Sweet Roll: Instead of chopped strawberries, use an equal amount of chopped fresh raspberries or raspberry jam. You can also eat other fruits, such as blackberries, peaches, cherries, and blueberries.
Strawberry Banana Roll: Replace about half of the strawberries with chopped banana. Sprinkle chopped walnuts or pecans over the filling before rolling the dough.

2. Roll out the dough on a floured surface into a rectangle less than 1/8 inch thick.
3. Spread softened butter or oil evenly over the rectangle.
4. Combine strawberries, sugar, cornstarch, and optional cinnamon in a medium bowl and stir until well combined.
5. Spread the strawberry filling on top of the pizza dough.
6. Roll the dough tightly into a long log shape, then slice it thinly using a knife or pizza cutter. Don’t worry if a little strawberry juice leaks out.
7. Arrange rolls in 8-inch pan. Bake on the center rack of the oven for 35 minutes, until the dough is cooked through, slightly golden, and the filling is bubbly.
8. Bring the cream cheese to room temperature and using a stand mixer or hand beater, whip the cream cheese, vanilla, and about half a cup of powdered sugar until fluffy.
9. Slowly mix in the remaining sugar powder. If the glaze is too thick, add a tablespoon or more of milk to thin it as desired.
10. Frost the strawberry sweet rolls while they are still warm, allowing the icing to melt to the top.
