Chef Gus Steffenhofer-Brandson and his team are an unstoppable behemoth, scooping up every award from a Michelin star in the city’s inaugural award to No. 1 on Canada’s 100 Best Restaurants of 2022. To find out what kind of alchemy is going on here, you’ll need to plan far in advance (reservations open 60 days in advance and sell out within hours) or eat at 5pm, but it would be blunt to leave it posted off the list just because it’s difficult to get a seat. At $165 ($123 USD) plus tax and tip, the excellent tasting menu is one of the most expensive in the city. If you’re on a budget, you can dine a la carte or buy snacks from the bar to sample fun and experimental dishes. Dishes change frequently, so try not to fall in love with any menu item.
Vibe check: In an extremely casual city like Vancouver, Published offers an opportunity to dress things up a little more formally, although yoga pants are still welcome.
