- Marinade Time: Soak the skirt steak for 2 to 24 hours. Any longer and the acids will break down the meat too much and it will become tender.
- High temperature: Skirt steak likes to be cooked quickly and hot. Let sit for 10 to 15 minutes before cutting, then cut against the grain for the most tender and juicy results.
How to Make Skirt Steak Marinade
I always go back to this because it is so easy and always so good. I like to serve it with sides like cilantro lime rice, roasted vegetables, or a simple, fresh salad.
- Make the marinade: In a small bowl, mix together the olive oil, soy sauce, lemon juice, Worcestershire sauce, minced garlic, Italian seasoning, pepper, salt, and a pinch of red pepper flakes.
