Creamy Potato Salad with Dill Pickles


I grew up in the Midwest. There, the classic creamy potato salad was on the menu at every summer cookout. As a child, it wasn’t my favorite and often had a soft, fuzzy feel (my least favorite texture).

But these days, I’m a potato salad convert. I almost always serve it whenever I have friends or family over in the summer. So what has changed?

I learned how to make a flavorful potato salad. This potato salad recipe is one of my favorites.

Here’s why I like it:

  • The secret ingredient makes all the difference. Dill pickles! Add chopped pickles to the salad for crunch. Sprinkle brine over the dressing. Pickle juice adds a delicious, refreshing flavor to this salad!
  • It’s creamy and crunchy. No one would call this potato salad mushy. I balanced it with creamy potatoes and chopped pickles with lots of celery.
  • I’m all in on the hub. Dill and chives add freshness to complement the creamy potatoes and dressing.
