This filetto di pomodoro recipe is from my friend Julia’s recipe box.

Julia is an amazing Italian chef. I always tell her she can make leather taste good! She always has a jar of homemade Filetto di Pomodoro sauce on hand. She makes it from scratch in the summer when tomatoes are at their peak and cans it so it can be used all year round.

When I don’t have fresh home-grown tomatoes, I use canned tomatoes imported from Italy, which is what I’ve included in the recipe below. But of course, if you can find fresh tomatoes, use those instead!
