Makeover Zippy Corn Casserole

I’ve had so many requests over the past few years to make this corn casserole that I decided to tackle the problem by popular demand. My cousin always makes corn casserole every year for Thanksgiving, so I knew where to find a good starting point. This is a simple corn casserole made with Jiffy corn muffin mix as a base and added canned corn and creamed corn. I added yogurt and egg whites to brighten the original and it was delicious. You might like these scratch-made cornbread muffins or cornbread fillings for your holiday table.

Why This Lighter Corn Casserole Works

Thanksgiving is all about aspects and most of us are quite nostalgic. My cousin always brings corn casserole for Thanksgiving every year, and we all love it. So when we were asked to make it lighter, we were happy to take on the challenge. Here’s why this works:

  • I used Greek yogurt and reduced the butter and egg whites to make it lighter.
  • Semi-Homemade – This easy recipe starts with a box of Jiffy Corn Muffins and just 6 additional ingredients.
  • Prepare ahead and reheat later!
  • Great to bring to a potluck if someone else is hosting it.

Here’s what you need to make a lighter Jiffy Corn Casserole for a healthier holiday. See recipe card below for exact measurements.

  • Corn Muffin Mix – Recipe Basics
  • Canned Sweet Yellow Corn and Cream Style Corn – You will need one can of each
  • Greek Yogurt – Adds protein and richness.
  • Egg Whites – They Hold It All Together
  • Whipped Butter – Very little is used here

How to Make Corn Casserole

You don’t need any fancy equipment, just a bowl, spoon, and baking dish. See recipe card below for printable instructions.

  1. Preheat oven to 350F.
  2. Spray a 9 x 13 baking dish with cooking spray.
  3. If you put all the ingredients in a large bowl and mix them together with a spoon, they will get fluffy and you will think you did something wrong. Don’t worry. it’s okay.
  4. Pour into prepared baking dish and bake for 55 to 60 minutes or until golden brown around the edges.
  5. Let cool for a few minutes before cutting.

  • For extra flavor, add a little Parmesan cheese.
  • Add fresh herbs such as chives.

You can make it in advance and reheat it when eating. It’s also great for reheating and eating leftovers the next day.
