This spring vegetable recipe is ready in under 20 minutes! This includes a simple dinner of asparagus, radishes and peas and a lively side menu.

Last weekend, I came home from the farmers market with tender asparagus, bright pink radishes, lush greens, and sweet, juicy sugar snap peas. Spring can sometimes get off to a slow start in April, but with the arrival of these spring vegetables, spring is officially upon us.
Over the next few weeks I will be cooking up spring vegetable recipes non-stop. Some of my favorite dishes, like asparagus risotto and meaty braised artichokes, are perfect for comforting weekend dishes, but there are plenty of other dishes that work perfectly for weeknights, too.
Below you’ll find a quick and easy spring vegetable recipe that I make again and again on busy weeknights. From lively dishes to bright, fresh dinners, all ready in under 20 minutes. Yes, you can eat asparagus, radishes, peas, herbs… You can eat that too!
Strawberry Spinach Salad
I make this spinach salad over and over again as a spring dinner side dish and healthy lunch. Filled with juicy strawberries, crunchy pecans, tangy feta cheese, and bright poppy seed dressing, this dish is part savory, part sweet, and downright delicious.
Lemon Orzo
Springtime calls for this one-pot, 20-minute dinner! The recipe calls for peas, but I also like them with other spring vegetables. Roasted asparagus and fresh spinach are both great here. I also often add chickpeas for protein.
Roasted Asparagus
Ready in just 15 minutes, this roasted asparagus is my favorite spring side dish. Simply seasoned with lemon juice, salt and pepper, it goes well with any main dish!
Easy Vegetable Stir-fry
Show off your spring peas and chives with this quick and easy weeknight stir-fry! This 5-minute stir-fry sauce is full of sweet, savory, and tangy flavor.
Chickpea Salad
If you’re looking for a healthy lunch idea with spring vegetables, I recommend this grab-and-go chickpea salad. Incredibly flavorful and refreshing thanks to three spring herbs – dill, parsley and mint.
cold cucumber soup
Save your gazpacho for summer. This Refreshing Cucumber Soup is the perfect cold soup to make this spring. This creamy blend of Greek yogurt, cucumber, herbs, olive oil and lemon is bright, nourishing and refreshing. Blend a batch in just 10 minutes!
Sesame soba
Crunchy radishes, sugar peas, and mint add the flavor of spring to this simple bowl of sesame noodles. Don’t worry if you don’t have the exact vegetables on hand. This recipe is flexible! Switch to asparagus, broccolini, bok choy, spinach, etc.
caesar wrap
Everything you love about Caesar salad wrapped in a tortilla! Make this recipe vegan by using Creamy Cashew Vegan Caesar Dressing or use Classic Caesar Dressing and stir-fry for 5 minutes.
Stir-fried Bok Choy
It’s hard not to fall in love with bok choy and other Asian vegetables at spring farmers’ markets. This simple side dish is my favorite way to cook it. Mirin, rice vinegar, sesame oil, and tamari add rich flavor.
Tagliatelle with asparagus and peas
fizzle! This elegant spring pasta is completely dairy-free! Chewy noodles, crunchy asparagus, and peas are coated with lemon-scented cashew nut cream sauce.
mango salad
great. Although mango is a fruit, not a vegetable, it is at its sweetest and juiciest in spring. I love this refreshing side salad with fresh herbs, crunchy peppers, and a bright lime dressing.
Roasted Asparagus
If you’re grilling veggie burgers in the spring, you’ll be cooking up a ton of asparagus on the side. They come out perfectly crispy, tender, vibrant green, and infused with delicious smoky flavor every time.
classic omelette
My favorite omelette filling screams spring! I love the combination of sautéed asparagus, pea shoots, avocado, and feta cheese. It’s perfect for a spring brunch, but I think it would also be great for dinner.
quick pickled radish
If you’re like me, you may have accidentally bought too many radishes at the farmer’s market this season (they’re too pretty to resist!). Don’t waste it. Instead, make sweet and tangy pickled radishes and stack them on sandwiches, add to salads, and top tacos.
peanut noodles
Delicate carrot and cucumber ribbons add crunch to this sticky peanut noodle bowl. tip: Don’t skip the herbs above. They make this recipe so refreshing for spring!
