A nutritious recipe for making your own homemade ancient grain baking mix that is as digestible as possible and free of the synthetic enhancements or binding gums commonly found in commercial flour versions.

When baking, I use a variety of freshly ground grains.
For example, this gluten-free baking mix is my favorite wheat-free flour mix.
Below is a mix of some of my favorite ancient grains, freshly ground and made into an all-purpose baking blend.
Use it to make waffles, pancakes, cookies, cakes, bread, and more!
This baking mix does contain gluten, but much less than irradiation-hybridized modern wheat and in an easier-to-digest form. This is the type of flour maker most commonly used in processed foods.
Using as many whole grains as possible in your menu planning not only improves nutritional value, but also reduces the likelihood of developing food sensitivities.
Kamut is optional in the recipe below. The reason is that it is difficult to find sprouted organic kamut fruits. In comparison, you can easily find other ancient grains (emmer, einkorn, spelt) in sprouted, whole grain form.
One way to solve this problem is to grind ungerminated kamut into a powder and include it in ancient grain mixtures.
However, it is much healthier to sprout the kamut fruit first before grinding it. This tutorial on how to sprout grains at home shows you how.
Because kamut takes extra time into account, I typically include kamut in this ancient grain flour blend as time allows!
