What is Cowboy Caviar?

Cowboy Caviar is a fresh black-eyed pea dip. It is typically made with black beans, corn, tomatoes, peppers, and a tangy vinaigrette dressing. Also called Texas caviar, it was developed by nutritionist Helen Corbitt in the 1940s with West African and Mexican influences.

I first tried cowboy caviar when I was growing up in the Midwest. There, it was a staple side dish and appetizer at summer potlucks and picnics. I’ve been testing and tweaking my own recipes over the years to get the right balance of juicy, crunchy texture and tangy flavor. We are very excited to share this updated version with you. How to Make Cowboy Caviar

This cowboy caviar recipe couldn’t be simpler to make!

First, chop the fresh ingredients into small pieces. Dice it into small pieces, about the size of a bean, so you get a little bit of everything in each bite.

Mix black beans, black beans, and vegetables. In a large bowl.





Then make the dressing. Pour the dressing over the beans and vegetables and toss to combine.

At this point I like to chill the dip for an hour to allow the flavors to develop. If you’re short on time, you can skip this step!

  • Make it your own. This cowboy caviar recipe is fantastic as written, but there are so many ways to change it up! Use Italian salad dressing instead of red wine vinaigrette. This cowboy caviar recipe is a refreshing and easy dip or side dish for potlucks and parties! Make it a day or two in advance. I find it best to make it after it’s been in the refrigerator for some flavor.

  • 2 roma tomatoes, Finely chopped (about 1 cup)
  • 1 red bell pepper, Cut the stems, scatter the seeds and chop finely.
  • ½ cup diced red onion
  • 1 Jalapeno Pepper, chopped
  • ½ cup chopped fresh coriander, Save some for decoration
  • 2 large avocado, pitted and chopped
  • tortilla chips, for service

Prevent your screen from going dark

  • In a large bowl, mix together black beans, black-eyed peas, corn, tomatoes, bell peppers, onions, jalapenos, and most of the cilantro.

  • Make the dressing: In a medium bowl, combine the olive oil, vinegar, lime juice, salt, sugar, garlic, cumin, cayenne, and a few grinds of pepper. Pour dressing over bean mixture and stir to combine.

  • Place in the refrigerator for at least 1 hour to allow the flavors to develop. Just before serving, fold in the avocado and season to taste. Garnish with reserved cilantro and serve with tortilla chips.
