Friends, I love these muffins so much. The ricotta cheese is incredibly moist and fluffy, and is naturally sweetened with maple syrup for a rich flavor. A quick and easy lemon glaze adds a delicious citrus flavor to the top.

The reason I chose to share this recipe is because it’s exactly what I crave for in the spring.—This time of year, I crave bright, lemony snacks. I’ve been making these muffins non-stop these days and I hope you all try them too.
