I love serving hushpuppies as a side dish to seafood-based dishes.

But restaurants use toxic vegetable oils to prepare their food, and my digestive system doesn't like that at all!

Canola oil and soybean oil are almost always GMO and are the preferred industrial fats for commercial establishments.

Sometimes you can even find a local restaurant that makes hushpuppies the healthy way.

If you don't have that kind of luck, and you like hushpuppies, you might want to try making them yourself.

Luckily, this dish isn't difficult to make at all!

You don't even need a fryer (I don't even have an air fryer).

In fact, I recommend making these delicious, hand-made treats ahead of time and refrigerating or freezing them so they're ready to eat when you need them.

Put it in your toaster oven and it will heat up quickly and perfectly!

I made hushpuppies with pressed coconut oil, which has a neutral flavor and high smoke point.

If you like, lard or tallow will work very well, but be aware that using these nutritious fats will slightly affect the taste of the hushpuppies, depending on your taste.

  1. In a medium saucepan, add enough pressed coconut oil to cover 4 inches. Heat the oil slowly to 350 °F/177 °C. Use a food thermometer to avoid higher heat to prevent the oil from spoiling.

  2. While the oil is heating, in a large bowl, mix together the cornmeal, einkorn flour, baking powder, garlic powder, corn kernels, and sea salt.

  3. In a separate large bowl, mix together the soured milk (or buttermilk), beaten eggs, grated onion, and chopped green onions.

  4. Add the dry ingredients to the liquid mixture, one half cup at a time, mixing until all ingredients are well combined in one bowl.

  5. Let sit for 10 minutes to allow the flavors to blend well.

  6. Scoop the batter with a large spoon into the hot oil and fry the hushpuppies in batches until golden brown (about 3 minutes).

  7. Remove from oil, transfer hushpuppies to a clean cotton towel or wire rack. Serve warm with your choice of sauce (tartar sauce or fruit chardonnay are good choices).

  8. Store any remaining hushpuppies in a glass container with a tight-fitting lid and refrigerate.
