CSM Ingredients, a global food technology company, announced that it has developed a new product that can reduce the fat content of baked goods.

The new product, known as SlimBake, is an emulsion that combines 'functional ingredients and advanced production technology'. The company said it can reduce the fat content of popular products by nearly one-third.

SlimBake can be used in both ambient packaging and frozen baked goods and is available in two varieties: butter-based and vegetable-based.

Manufacturers of food products such as croissants, Danish pastries and puff pastries can use this ingredient to claim “reduced fat content” on their product packaging under EU regulations without having to change recipes or production processes. Additionally, industrial users can keep the original recipe and production process unchanged.

CMS Ingredients has also launched “E-free margarine,” an additive-free margarine that it says is “ideal for critical lamination applications.” Lamination is the process of repeatedly folding and layering butter and dough to create thin layers of pastry, a dough separated by fat. E-free products are products without additives designated with an E-number.

The E-free margarine range has been made possible through innovations at the company's new facility in Crema, Italy, and is expected to soon launch a second variety ideal for “integrated applications”.

It is difficult to improve the nutrition of foods such as pastries and cakes without changing their texture and taste, so finding new ways to make healthier baked goods by reducing fat content and using fewer additives is a challenge.
