I love it with chicken breasts, but I’ve had equally delicious results with thighs, drumsticks, and wings. Whether I’m meal prepping for the week or hosting a cookout in the backyard, this roasted chicken marinade never disappoints!

I keep this marinade simple with pantry staples.

  • olive oil: I use extra virgin olive oil instead of vegetable oil to keep the chicken moist while it coats and marinates. Avocado oil also works well.
  • Worcestershire Sauce: It adds rich, savory depth. For a gluten-free option, use coconut aminos mixed with gluten-free Worcestershire sauce, tamari, gluten-free soy sauce, or a little apple cider vinegar.
  • honey: A little honey adds sweetness to balance out the acid and helps the chicken caramelize beautifully on the grill. Maple syrup is an easy substitute.
  • Dijon Mustard: I love the subtle tang that Dijon adds to marinades. Spicy brown mustard has a bit of a kick, but yellow mustard may be a little too mild.
  • lemon juice: Fresh lemon juice brightens the flavor of the marinade and helps tenderize the chicken. Bottled lemon juice will work, but fresh always tastes best.
  • Lemon flavor: I never skip the zest because it adds a refreshing citrus flavor without adding acidity.
  • Minced garlic: Fresh garlic adds a rich, savory flavor to this marinade. Jarred minced garlic is a convenient substitute.
  • Red pepper flakes: Just a pinch can add a gentle heat to the marinade without making it spicy. Feel free to leave it out or add more for an extra kick.

You can have juicy, flavorful roasted chicken in just a few simple steps. Here are our top tips to make this marinade work its magic.

Prepare the Chicken

I usually use this Worcestershire sauce marinade with boneless, skinless chicken breasts, but you can use it with just about any part of chicken. If the breast meat is particularly thick, I prefer pounding it to an even thickness and grilling it.

When it’s time to marinate, place the chicken in a large Ziploc bag or shallow baking dish and let it marinate. Then turn the chicken over a few times to make sure all the pieces are completely coated, then cover and place in the fridge.

Marinade for maximum flavor

For the juiciest, tastiest chicken, we recommend marinating it for 12 to 18 hours. When I don’t have enough time to marinate, I try to allow the seasoning to soak into the meat for at least 2 hours. I always marinate the chicken in the fridge, and if you’re using a baking dish, you can also flip the chicken halfway through so both sides have plenty of time to marinate.

Because this recipe includes both balsamic vinegar and lemon juice, we do not recommend marinating the chicken for more than 24 hours. The acid may begin to break down the meat too much, making the texture tougher.

Preparing the grill

Before you start grilling, make sure the grill grates are clean and lightly oiled if necessary to prevent sticking. Then remove the chicken from the marinade, wipe off any excess water and place on the grill. This will help prevent explosion while still leaving plenty of flavor in the chicken.

How to Grill Chicken

Once the chicken is finished marinating, preheat the grill to 400°F and place the chicken directly over the heat.

For an average 6-ounce chicken breast, sear on the first side for 7 to 8 minutes, then turn once and cook for another 8 to 10 minutes, depending on thickness. Avoid turning the chicken several times to ensure it gets beautiful grill marks and cooks evenly.

I always use an instant-read meat thermometer to check for doneness rather than relying solely on cooking time. When the internal temperature at the thickest part reaches 165°F, remove the chicken from the grill and let sit for 5 minutes before slicing. A short rest helps the juices redistribute, keeping the chicken tender and juicy.

Can I use this marinade with other cuts of chicken?

Good news! This marinade can be used on almost any part of chicken. I usually make enough to coat about 2 pounds of chicken, and like to switch things up depending on what I have on hand. Other than chicken breast, my favorite options are:

Storage and Freezing

To store cooked chicken, store roasted chicken in an airtight container in the refrigerator for up to 3 to 4 days. I like to slice them ahead of time so I can add them to salads, wraps, bowls, or quick lunches.

To freeze raw marinated chicken, place chicken and marinade in freezer-safe bags, remove as much air as possible, and freeze flat until firm. When you’re ready to cook, place the frozen chicken in the refrigerator and let it thaw overnight.

The chicken continues to marinate as it thaws, so it’s ready to grill the next day. For best texture and taste, we recommend using thawed chicken within 24 hours.
