I make this refreshing watermelon feta salad all summer long! I had a friend over for a BBQ for her birthday and I served this simple watermelon feta salad with grilled lobster tails, grilled steak, arugula, and mint. It was a huge hit! Watermelon is light and refreshing, making it the perfect summer salad ingredient. How to Make Watermelon Feta Salad

- Drain the liquid from the bowl about 30 minutes before serving (I poured it into a cup and drank it!).
- Spread half of the watermelon in a large, shallow serving bowl and top with half of the arugula and feta. Repeat with the remaining watermelon, arugula, and feta, then top with the fresh mint.
