Watermelon Feta Salad with Arugula and Mint

Watermelon feta salad

I make this refreshing watermelon feta salad all summer long! I had a friend over for a BBQ for her birthday and I served this simple watermelon feta salad with grilled lobster tails, grilled steak, arugula, and mint. It was a huge hit! Watermelon is light and refreshing, making it the perfect summer salad ingredient. I make lots of other watermelon salads too, like this Grilled Peach Watermelon Burrata Salad and this Watermelon Caprese Salad.

Why I Love This Watermelon Feta Salad

This salad is so easy and looks so fancy! The watermelon is so juicy that it doesn't even need dressing. I used a melon baller to cut the watermelon into little balls, but you can also cut it into small pieces. I love how the sweet and salty flavors go together. The freshness of the watermelon goes perfectly with the saltiness of the feta cheese, and the fresh mint adds the perfect finishing touch.

  • healthy: Watermelon is low in calories and full of vitamins C and A. And arugula is a good source of calcium, potassium, folate, vitamins C, K, and A.
  • Hydration on hot summer days: Watermelon is mostly made up of water, which helps keep you hydrated and full.
  • Peak season agricultural products: With summer watermelon and mint, you don't have to do much to make it taste good – it's already so delicious on its own.
  • Dietary restrictions: This healthy sheet pan shrimp dish is packed with protein, gluten-free, dairy-free, and Weight Watchers-friendly.

  1. Start with a melon baller and shape the watermelon into large balls. If you don't have one, simply cut them into 1/2-inch pieces. Set aside in a bowl until ready to serve.
  2. Drain the liquid from the bowl about 30 minutes before serving (I poured it into a cup and drank it!).
  3. Spread half of the watermelon in a large, shallow serving bowl and top with half of the arugula and feta. Repeat with the remaining watermelon, arugula, and feta, then top with the fresh mint.
