Why this works

Gina @ Skinnytaste.com

This is my favorite dish to bring to all my friends’ parties. Even if you quadruple the recipe, it always disappears quickly! This is very similar to ceviche. Some might argue that it is ceviche. Instead of just “cooking” the shrimp in lime juice, use cooked shrimp. It’s delicious and suitable for all types of diets – Whole30, Paleo, Keto, gluten-free, dairy-free, pescatarian, etc.

  • bright and fresh taste – Fresh lime juice, cilantro, and jalapenos add bold, vibrant flavor to this salad, making it light and refreshing.
  • Creamy and vivid contrast – Buttery avocado balances juicy tomatoes and shrimp for great texture in every bite.
  • Freezer-friendly shortcuts – I always keep shrimp in the freezer for last minute appetizers. This salad thaws quickly and can be easily eaten together at any time.
  • Perfect for warm weather – Light, refreshing and quick to come together, great for summer parties, cookouts or as an easy appetizer.

  • salt and pepper – Enhances every flavor.

A few notes

  • Expand for your party – When taking it to a party, double or triple the recipe because it disappears quickly.
  • move forward – Mix all ingredients except avocado and cilantro and refrigerate. Add just before serving to keep the avocados fresh and the herbs bright in color.
  • When using raw shrimp – Preheat oven to 400°F. Spray two large nonstick baking sheets with cooking spray, spread the shrimp in a single layer and toss with a little olive oil. Grill for 6 to 8 minutes or until shrimp are opaque. Let cool and then continue with the recipe.

How to Make a Flavorful Shrimp and Avocado Salad

Here’s how to make Fresh Zesty Lime Shrimp and Avocado Salad (step-by-step photos). See recipe card below for printable instructions.

First, combine red onion, lime juice, olive oil, salt, and pepper in a small bowl and let sit for about 5 minutes. This quick marinade softens the sharp flavor of the onions and adds flavor to the salad.

In a large bowl, combine chopped shrimp, avocado, tomatoes, and jalapenos. Then pour the onion and lime mixture on top, add the cilantro and gently toss everything to keep the avocado intact. Taste quickly, adjust salt and pepper if necessary, and it’s ready to eat.

If you want to eat it later, add the avocado right before eating.

*If using raw shrimp, boil them quickly. Bring a pot of salted water to a boil, then add the shrimp and cook until the shrimp turn pink and opaque, about 2 to 3 minutes. To stop cooking, drain and transfer to an ice bath. Once cooled, chop the shrimp and continue with the recipe. Starting with freshly cooked shrimp will taste better than using pre-cooked shrimp!
