night soil 24 (cookie)
- 1 cup Natural Creamy Peanut Butter (The only ingredients are peanuts and salt // see our peanut butter review here)
- 2/3 cup maple syrup*
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 2 cup rolled oats (Use certified gluten-free oats if desired)
- 1/2 cup Natural colored candy coated chocolate (Additional toppings // ensured vegan/gluten-free as needed // We love Dark Chocolate Peanut Gems and Dark Chocolate Crispy Quinoa Gems from Unreal Snacks)
- 1/2 cup mini semisweet chocolate chips (Check for dairy-free as needed // We love Enjoy Life)
Preheat the oven to 350 degrees F (176 degrees C) and line two baking sheets with parchment paper (or use nonstick or lightly greased baking sheets). Set aside.
In a large mixing bowl, combine peanut butter, maple syrup, vanilla extract, baking powder, baking soda, and sea salt. Stir to mix well.
Next add rolled oats, candy coated chocolate and mini chocolate chips. Stir until candy is evenly distributed.
- Using a medium cookie scoop (or spoon), scoop out about 1 ½ tablespoons of dough onto a baking sheet. Lightly flatten the dough by pressing it with your palms. It may stick to your hands slightly (this is normal!). Top with extra candy (~1-2 per cookie).
Bake for 11-13 minutes until lightly golden. Let cool slightly before enjoying. Allow leftover cookies to cool completely before storing in an airtight container for up to 2-3 days. You can also scoop out the cookie dough, flatten it slightly, freeze it (stacked between layers of parchment paper to prevent sticking), and then bake it from frozen for an additional minute or two.
